I’m sure we all have those days when cooking is the last thing on the list and you just want to sit in front of tv and order pizza instead.
For days like that, save this recipe – it takes just 10 minutes to put together and while it’s cooking in the oven, you can get your favourite movie ready and open a bottle of wine.
I found a few recipes online, but there was too much chopping and cooking involved, so here is my simplified super fast quiche.
Actually the first-ever quiche I made.
Spinach, Feta & Quinoa Quiche
Original recipe from food.com, here is my variation of it:
- 1 package frozen shortcrust pastry dough
- 1 tablespoon olive oil
- 2 cups packed fresh spinach leaves
- 4 large eggs
- 2⁄3 cup cream or milk
- 1/2 cup of quinoa, soaked overnight in water
- 1⁄3 cup crumbled feta cheese
- 6 dried cherry tomatoes, cut in half
- 2 cloves garlic, minced
- 4 slices of cheese
Take the pastry out of freezer and let defrost for couple of hours. Lay the dough into a baking pan of your choice – I didn’t have a round one so I used a regular pan. Lay it around the edges and leave enough on the sides, to make sure it will form a crust around the edges and hold the filling.
In a mixing bowl, put together spinach leaves (washed), quinoa, crumbled feta cheese, eggs, creme, garlic and season with salt and pepper. Pour into your baking tray and sprinkle with sun dried tomatoes. Cover with cheese slices and bake at 350 F or 180 C for 45-50 minutes.
