Simple & Delicious Avocado Pasta

From time to time, our house is suffering from an overdose of avocados.

I have them for breakfast, my little guy eats them on daily basis with mashed bananas and eventually, by end of the week we would end up with a pile of avocados that we simply can’t consume fast enough.

For those lonely fellas in the fruit bowl, this recipe is a lifesaver. It’s probably one of the easiest avocado pasta dishes you will come across and the flavors you can get from a humble dish with few ingredients are to die for.

This recipe has become our household favorite and we’ve been having it almost every week. Discovered online by our aupair, here is the most guarded secret from our kitchen:

Simple, Healthy & Delicious Avocado Pasta

Ingredients:

  • 1 garlic glove (I prefer couple or three, depends on your taste)
  • half of chili with removed seeds
  • two perfectly ripe avocados
  • 1 lime
  • olive oil
  • handful of parsley (fresh)
  • handful of basil (fresh)
  • 30 gr Pecorino cheese
  • 30 gr Parmesan cheese
  • 400 – 500 gr spaghetti

Make the sauce directly in the serving dish while you’re cooking the pasta (go only all dente).

Cut the avocados into cubes and mash them in the serving bowl with a fork, add diced garlic, chili and squeeze the lime.

Add chopped herbs and grated cheese with a drizzle of olive oil. Mix well with a spoon and season to taste, make sure you taste the sauce before mixing with pasta, you will need to add salt to get the flavors come to life.

Once your pasta is ready, add a bit of the water from pasta to your sauce, mix and add your pasta. Mix well so all the spaghetti is coated in the delicious sauce.

Serve with fresh basil and generous grating of Parmesan cheese!
