Spring Salad with Exotic Fruits

I hereby declare the salad season officially open.

Lets celebrate with something cheerful as summer itself – a very simple salad with just few ingredients and exotic fruit for a new twist. After being a serial cake offender, I’m ready to clear my sins with this handsome display.

Spring Salad with Exotic Fruits


  • few handfuls of fresh spinach leaves
  • half of dragon fruit
  • 2-3 passion fruits
  • half of pomegranate
  • lime
  • avocado
  • half of orange
  • nuts of your choice – pine nuts, cashews etc
  • olive oil and balsamic vinegar

No rocket science involved here – start layering your salad on a pretty tray – start with spinach leaves, then slices of dragon fruit, avocado, scoop out passion fruit, add a sprinkle of lime, nuts, pomegranate seeds and small slices of orange. When done, sprinkle with olive oil and balsamic vinegar (which I left out this time).

Voila! Impressive, bright and extremely healthy summer salad.

It has biking body written all over it!

    That salad looks sooooo good! I would of never thought of putting dragon fruit into a salad but it sounds like a great idea as you’ve demonstrated! Will be trying that out for summer BBQs and potlucks for sure!
